Roasted Cauliflower Toast With Beet Hummus

This gorgeous Roasted Cauliflower Toast With Beet Hummus is impressive for springtime gatherings. A beetroot hummus is spread on toasted gluten-free sourdough and topped with roasted purple cauliflower, feta, pistachios, and fresh mint. Add edible flowers to add an extra pop of color. It’s earthy, sweet and subtly nutty - satisfying with complex flavor and textures. 

 

The Base: Gluten-Free Sourdough

This sourdough is made from only a few ingredients including millet flour, sorghum flour, and arrowroot, making it easily digestible and a wholesome base for a load of nutrient-dense toppings.

 

The Spread: Beet Hummus

The beet hummus is the star of this recipe. You’ll just blend beets, tahini, lemon, olive oil, and garlic. We also add an ice cube to emulsify it and create a more consistent texture, though this is optional. 

It turns into a beautiful deep magenta, and with colorful toppings, this toast is unlike any others!

 

The Toppings: Caramelized, Creamy, and Colorful

Lastly, we top our sourdough toast with crumbled feta, roasted purple cauliflower, crushed pistachio, and fresh mint. 

Feta is a must for this recipe. You could swap with goat cheese but the tanginess of feta works best with the sourdough. Since this is a strong cheese, you won’t want to add too much. Plus, it's easier to crumble. 

You can find purple cauliflower at specialty grocery stores. It adds color contrast to the feta, but regular cauliflower will taste similarly. Roast for about 20 minutes at 400 for a nice caramelized texture and flavor. 

Crushed pistachios add nuttiness and crunch and the mint keeps it tasting fresh. Mint is also in many Mediterranean dishes alongside these other ingredients.

INGREDIENTS

Cauliflower Ingredients:

1 small head purple cauliflower, cut into florets
1 tbsp extra virgin olive oil
Generous pinch of salt

Beet Hummus Ingredients:

1 can white beans, drained and rinsed
2 small cooked beets (or about half of a Love Beets package, drained)
2 tbsp tahini
1-2 cloves garlic
Zest of one lemon
Juice of ½ lemon
Generous pinch of salt
1 large ice cube
¼ cup extra virgin olive oil

Toast Ingredients:

 

DIRECTIONS

  1. Preheat oven to 400 degrees. Toss cauliflower with olive oil and salt and place on a large sheet pan. Roast for about 20 minutes, tossing halfway through.
  2. While the cauliflower is roasting, make the beet hummus. Add all ingredients except the olive oil to a food processor and blend. With the motor still running, slowly drizzle in the olive oil. Taste and adjust if needed.
  3. Assemble the toast. Add the beet hummus and roasted cauliflower to the toasted Bread SRSLY sourdough, then add the remaining toppings. Enjoy!
