1) Tell us about yourself:
Hi y'all! I'm Whitney Stuart, a registered dietitian and diabetes educator. I've been in practice now for nine years. I run a virtual practice, Whitness Nutrition, which focuses on a functional approach to nutritional counseling for individuals ready to radically improve their health. I use empowered education, simplified implementation, and high-touch virtual accountability. I support individuals who want to lose fat/gain health without calorie counting and fad diet BS utilizing my proven #bloodsugarbliss protocol that focuses on a real food first approach. I'm the sassy and supportive registered dietitian sharing the best food swaps over at @whitnessnutrition !
2) Where are you from?
I live in Dallas, Texas with my husband, son and mini Aussie. I'm originally from the PNW, my hometown is sandwiched between Seattle and the Canadian border.
3) How did you find out about Bread SRSLY?
I discovered Bread SRSLY through a really good friend when I was home for the summer in Washington. During a summer trip to Lake Tahoe, I found a loaf, toasted it for sandwiches and my whole family was in awe of just how delicious it was. Plus, I kept seeing it pop up on my Instagram feed! I had been really wary of gluten-free bread thanks to the horrors of having Celiac in 2009 but, my life is forever changed for the better now!
4) What's your favorite Bread SRSLY product and how do you enjoy it?
It's definitely the Classic Gluten-Free Sourdough Loaf since it's not only blood-sugar and gut friendly, it's also quite versatile. I enjoy it toasted with a smear of peanut butter alongside some scrambled eggs & veggies. My son loves when I use it to make my famous French toast. It was one of his first words- "toast!"
5) What are some of your favorite gluten-free restaurants/cafes?
- Unrefined Bakery for gluten-free sweet treats, my birthday cake, and iced coffee
- Origin Kitchen for brunch & lunch, not only are they celiac friendly but also seed-oil free
- Written by The Seasons for a nice date night, they're so accommodating and the menu changes seasonally!
6) What's one thing you wish people knew about going gluten-free?
I received a diagnosis of Celiac disease in 2009 and while it was tough, shocking and a rocky start, I can tell you that my life changed for the better with that diagnosis. In the beginning, I had a lot of food fear and it really tested my relationship with food (the scarcity mindset is real!), which took a lot of work to get through - thank goodness for therapy and Registered Dietitians! I mostly just ate sugar. But, in the long run, this diagnosis taught me foundational nutrition skills I hadn't needed before. I learned how to cook, I learned how to eat a LOT of different foods I wouldn't have tried prior, and I learned that a gluten-free diet can be anything but restrictive, if you're curious! These are the tools I give my clients now - label reading confidence and cooking skills to feel healthy and good in their bodies even with dietary intolerances.
7) What fills your cup? (What self care looks like for you)
I really live for the mornings! My husband and I do a walk with our son and pup, coffee on board, and get some sunshine time before the bustle of the day begins. I value family more than anything and work hard to not only provide for them, but fully embrace the time away from work that we have together.
