Butternut Squash & Goat Cheese Toasts (Gluten-Free, Vegetarian)

These gluten-free toasts are the perfect way to embrace cozy winter flavors! Made with a creamy butternut squash puree, crumble goat cheese, honey and red pepper flakes, this recipe is cozy, flavorful and nourishing. Use the gum-free, rice-free XL loaves for bigger slices. You can even add a fried egg on top for that runny yolk deliciousness.

Total time: About 50 minutes (mostly idle time for squash to roast)

INGREDIENTS

1 small butternut squash (about 1 lb)

2 tbsp olive oil

1/2 tsp garlic herb seasoning (optional or make your own)

Sea salt 

4 slices Bread SRSLY Gum-Free, Rice-Free Sourdough Pullman Loaf

4 oz goat cheese (try using garlic & herb for more flavor!)

1 tbsp honey

Fresh herbs (like thyme or rosemary), for garnish

Red pepper flakes

Flakey salt


 


DIRECTIONS

1. Start by preparing the butternut squash. Preheat your oven to 400°F.


2. Cut the ends off of the butternut squash and cut in half lengthwise. Drizzle with olive oil and season with salt. Place the halves cut-side-down on a baking sheet. Roast for about 35-40 minutes, or until the squash is soft and golden brown.


3. Allow the squash to cool then transfer to a blender or food processor. Add 1 tbsp of olive oil, a pinch of salt and optional garlic and herb seasoning. Blend into a smooth purée.


4. Toast bread slices until golden brown (you can toast them in the oven since it's at 400!).


5. Spread the butternut squash mixture onto each slice then add crumbled goat cheese. Top with a drizzle of honey, fresh herbs, red pepper and flakey salt. 


6. Optional: add a fried egg on top. Enjoy!
