Classic Bruschetta on Gluten-Free Sourdough Toast

Gluten-Free, Vegan Option
Serves: 4-6
INGREDIENTS
2 cups chopped tomatoes
1 clove garlic, minced
½ tsp lemon zest
2 tbsp balsamic vinegar
2 tbsp olive oil
½ cup basil leaves, torn
¼ cup parmesan, grated (or vegan alternative)
Toast:
2 tbsp olive oil
4 pieces diagonally sliced Bread SRSLY Classic Gluten-Free Sourdough
1 clove garlic, cut in half
Sea salt
DIRECTIONS
- In a large bowl, combine tomatoes, garlic, lemon zest, vinegar, and olive oil. Let sit for 5-10 minutes.
- Toast the bread in a toaster, or heat in a pan until golden. Drizzle with olive oil, and rub garlic overtop. Season with salt and pepper. Set aside.
- Spoon the tomato mixture onto the bread, top with basil and parmesan cheese, and enjoy!
