Gluten-Free Sourdough Toast with Bruschetta and Fresh Tomatoes and Basil

What is Bruschetta?

Bruschetta is an Italian appetizer consisting of bread, olive oil, and tomatoes. Typically also served with hard cheese, basil, and balsamic vinaigrette, this appetizer has passed generations and borders as one of the most known appetizers at restaurant tables.

Bruschetta comes from the word "bruscare" which means to roast over coals. Being so, the bread should be grilled until toasty and golden. A little char wouldn't hurt either. 

 

How To Make The Perfect Bruschetta

Use the ripest tomatoes from the garden, or from a farmer's market or grocery store. Organic always tastes best. Find a mix of red and golden steak tomatoes for their color and meaty texture. If you're going for maximum flavor, cherry tomatoes offer a sweet and pungent bite.

Use fresh hard parmesan and shred into large thin slices. The best parmesan brands include Sartori and BelGioioso.

 

The "Bruscare": Toasted Bread 

Using gluten-free classic sourdough bread, toast your bread on a pan with olive oil for about 2 minutes on medium heat. Gluten-free bread may require more olive oil because the gluten-free flours absorb liquid more readily than wheat. However, it will toast slower, so you would want the pan no more than at medium heat for at least 2 minutes on each side.

INGREDIENTS

  • 2 cups chopped tomatoes 
  • 1 clove garlic, minced
  • ½ tsp lemon zest
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • ½ cup basil leaves, torn
  • ¼ cup parmesan, grated (or vegan alternative)

DIRECTIONS

  1. In a large bowl, combine tomatoes, garlic, lemon zest, vinegar, and olive oil. Let sit for 5-10 minutes.
  2. Toast the bread in a toaster, or heat in a pan on both sides with olive oil until golden for the best texture. Drizzle with olive oil, and rub garlic overtop. Season with salt and pepper. Set aside.
  3. Spoon the tomato mixture onto the bread, top with basil and parmesan cheese, and enjoy!
