Summer Peach Basil Grilled Cheese (Gluten-Free)

Fresh Ingredients From The Farmer's Market
Fresh fruits with a salty meat or cheese is what makes summer recipes stand out. Whether its fig, blackberries, or peaches, you'll want a complementary savory flavor to balance it out. We're using these ingredients, fresh from the farmer's market:
- Peach: Juicer and less sweet than berries, peaches are classically summer and brilliant in a grilled sandwich. You can even grill them separately to bring out the flavor!
- Raw cheddar cheese: You can find raw cheeses often at the farmer's market, rather than at the grocery store. A sharp cheddar cheese has firm texture and a tangy flavor, which pairs well with a less sweet fruit like peach.
- Basil: Basil ties this whole recipe together. Herbs are super common in summer dishes and we love the freshness that basil brings out.
- Gluten-free Bread SRSLY sourdough: Bread SRSLY's gluten-free sourdough is the backbone of this recipe. Fermented from wild yeast, the slight sourness from this bread perfectly complements savory cheddar cheese and juicy peach. INGREDIENTS
- 1 tbsp butter (or vegan butter)
- 2 slices Bread SRSLY Classic Gluten-Free Sourdough
- 3 or 4 slices raw cheddar (or dairy-free cheddar)
- A quarter of one fresh peach, thinly sliced
- 3 or 4 fresh basil leaves, julienned
DIRECTIONS

Heat a small pan over medium low heat and add the butter. Once melted, add both pieces of sourdough. Toast the sourdough in the pan for 2 minutes or until barely golden.

Layer the slices of cheese on one slice of bread followed by the basil and the peach slices. Place the other piece of bread on top, butter side up.

Once the bottom slice is golden brown, carefully flip the sandwich (this should take about 2 minutes).

Cook for another 2 minutes until golden on both sides and the cheese is melted. If it starts to burn, turn the heat down and add a bit more butter!
