How to Make These High Protein Breakfast Sandwiches

Sheet Pan Eggs

Sheet pan eggs are the easiest way to make breakfast sandwiches. Rather than go through the mess of pan frying each egg one by one or attempting to assemble scrambled eggs on top of bread, baking in the oven creates a consistent, easy-to-cut layer of egg.

Add Cottage Cheese & Blend!

Cottage cheese makes your eggs more decadent and fluffy while adding a boost of protein. Blend the cottage cheese with the eggs to get rid of the cottage cheese clumps, but be sure not to over blend or you risk your eggs becoming flat.

Add Toppings

Add spinach and green onions to your sheet pan before baking. Adding these ingredients to your bake rather than on each individual sandwich makes the assembly process even simpler.

Assemble!

Take out of the oven, slice into even pieces, then assemble your sandwich! We add avocado, turkey bacon, and cheddar cheese, though the toppings are up to you!

 

Tips When Making 

  • Again, be sure not to over blend your eggs or you may ruin the protein network, creating a less fluffy texture.
  • Oil your baking sheet before pouring in your egg. No one wants their eggs sticking!
  • Once assembled, throw your sandwiches back into the oven on broil to melt the cheese.
  • Lightly toast your Bread SRSLY buns before assembling. Our gluten-free bread is much better tasting once toasted. If you’re putting the sandwiches into the broiler, this will help toast the bread a bit as well.

 

How to Add Fiber and Protein to Any Breakfast Sandwich

To increase the fiber and protein content of any breakfast sandwich, follow these tips:

  • Add cottage cheese to your eggs. A low-fat cottage cheese has 13g of protein per serving, plus it makes your eggs extra creamy and delicious.
  • Add a meat like turkey bacon or a sausage or turkey patty. If plant-based, look for protein alternatives like tofu or tempeh.
  • Increase your fiber with high-fiber bread. Most commercial breads and gluten-free breads will only have about 2 grams of fiber per serving. Our gluten-free sourdough sandwich rolls have 5 grams of fiber. They are made without gums and rice flour and instead with high-fiber gluten-free substitutes like sorghum flour and psyllium husk. Fiber helps make your meals more filling and supports a healthy digestive system.
  • You can also increase the fiber content with toppings like avocado, kale, or smashed beans.

Makes 4 breakfast sandwiches

Equipment Needed: ½ sheet pan (or double the recipe and use a full sheet pan!)

INGREDIENTS

Egg bake Ingredients:

  • 1 tsp olive oil
  • 6 large eggs
  • ½ cup cottage cheese
  • Salt and pepper, to taste
  • 2 green onions, thinly sliced
  • 2 cups baby spinach

Remaining Sandwich Ingredients:


DIRECTIONS

  1. Preheat oven to 325 degrees.
  2. Drizzle your ½ sheet baking sheet with olive oil and use a paper towel to coat the pan thoroughly. Line with parchment paper and set aside.
  3. Add the eggs, cottage cheese, and salt and pepper to a food processor. Blend until just smooth. Pour the egg mixture into the pan, then sprinkle the green onions and spinach over the mixture. Use a spoon to swirl the greens into the eggs if necessary.
  4. Bake for 18-20 minutes, or until eggs are set.
  5. Remove from oven and slice into equal pieces. Assemble the breakfast sandwiches. Add ½ avocado to each side of each roll, then add an egg slice (or two if preferred), slice of cheese, and turkey bacon. If you want the cheese to be extra melty, put all four sandwiches under the broiler after you add the cheese and before you add the turkey bacon. Feel free to add chili oil if you want to spice things up!


Note: If you have leftovers, you can wrap each prepared sandwich in tin foil and freeze until ready to eat. Then, bake at 350 degrees still wrapped in foil for about 20 minutes, until breakfast sandwich is warmed and ready to serve.
