Gluten-Free Chicken Burgers w/ Red Pepper Sauce

These Gluten-Free Chicken Burgers with Red Pepper Sauce. turned out delicious. They are so easy to make that I whipped them up for lunch during a busy day! A simple chicken burger comes together with a sourdough bun and simple from-scratch roasted red pepper sauce.

Top with white cheddar cheese, avocado, and micro-greens.

INGREDIENTS

For the burgers:

For the red pepper sauce:

  • 2 red bell peppers, sliced in half and seeds/stems discarded
  • 2 tbsp mayo (regular or light)
  • 2 garlic cloves 
  • Pinch of salt 

For toppings:

  • 1 avocado, thinly sliced
  • 4 slices of white cheddar cheese
  • Handful of fresh micro basil (or other micro greens/lettuce of your choice)

DIRECTIONS

  1. Turn the grill on and, once hot, add the red peppers. Cook for about 5 minutes each side or until beginning to char. Remove and set aside. 
  2. Meanwhile, mix the ground chicken with the Italian seasoning, garlic and salt and form into 4 patties. 
  3. Rub with a bit of oil and add the patties to the grill, cooking for about 4 minutes on each side or until internal temperature is 165°. Add a slice of cheese in the last minute. 
  4. When the bell pepper is cooled, add to a food processor with mayo, garlic and salt and blend until smooth. 
  5. Slice the buns in half and toast until warm and slightly crispy, then spread the red pepper sauce on both sides. 
  6. Add the micro basil, avocado, burger patty and enjoy!
