Summery Sourdough Sandwiches Two Ways (Gluten-Free, Gum-Free & Rice-Free)

With warm weather on the horizon, there's no better time to make tasty grab-and-go sandwiches to take to the beach, the park, or wherever your summer adventures lead you. Our friend Fiona has whipped up two tasty sandwich variations that go beyond your basic peanut butter and jelly to please everyone's palates. Feel free to follow the recipes as-is or riff by swapping in some of your favorite sandwich fixin's!

Total time: 10 minutes (including bread toasting time if you opt to toast)

Yields: 1 serving each

Gluten-Free, can be made dairy-free with dairy-free cheese

 

INGREDIENTS

 

Hearty Veggie Sandwich:

2 slices Bread SRSLY Gum-Free, Rice-Free Sourdough Loaf

1 tsp Cilantro jalapeno hummus, or more to your liking

1 large slice heirloom tomato

Small handful of sprouts

1/4 avocado, sliced

One small red radish, thinly sliced

One Persian cucumber, thinly sliced

1 tbsp sauerkraut 

 

 

Chicken & Fig Jam Sandwich:

2 slices Bread SRSLY Gum-Free, Rice-Free Sourdough Loaf

1 tsp Dijon mustard, or more to your liking

1 tsp Fig jam, or more to your liking

3 slices roast chicken

2 slices cheddar cheese

Small handful of sprouts

1 large slice heirloom tomato

 

DIRECTIONS

1. Assemble your sandwiches and enjoy with friends! 

 

Pro tip: toast the bread slices on your toaster's bagel setting before you assemble the sandwiches for an even tastier sandwich and a satisfying crunch!
