Monkey Bread

This ooey-gooey Monkey Bread is a cinch to prepare and great for little ones who love to help in the kitchen! Bread SRSLY Dinner Rolls make the perfect base for this tear and share brunch dish, made with sweet maple and crunchy pecans!

We're using a gluten-free sourdough dinner rolls with a sweet cinnamon mixture poured on top. This recipe goes super well with baked apples and pecans. Serve for holiday breakfast or as a delicious brunch treat!

I love this gluten-free dinner rolls because they're soft and pillowy and made with wonderfully wholesome ingredients. You can use any of your favorite gluten-free breads. If using sliced bread, cut into two inch thick cubes and pack tightly into a bundt tray.

Cornstarch or arrowroot powder is mixed with cinnamon and sugar to draw excess moisture from the mixture, creating a light and fluffy bake. Make a quick caramel sauce with melted butter, maple syrup, and brown sugar. This elevates the dish making it have that rich, ooey-gooey texture that defines monkey bread.

This recipe is completely gluten-free. Make it vegan with a vegan butter.

INGREDIENTS

  • 2 bags Bread SRSLY Dinner Rolls (16 rolls total)
  • 3 large eggs, beaten
  • 1 tbsp cornstarch or arrowroot powder
  • ½ cup sugar
  • 1 tsp cinnamon
  • ¼ cup maple syrup
  • ¼ cup brown sugar
  • ½ cup chopped pecans
  • ½ cup melted butter

DIRECTIONS

  1. Preheat the oven to 350F. Spray a Bundt pan with cooking spray.
  2. Quarter each dinner roll and place in a large bowl. Pour the beaten eggs over the rolls and toss to coat.
  3. Whisk together cornstarch, sugar, and cinnamon in a small bowl. Sprinkle cinnamon sugar mixture over the rolls, stirring gently to coat all the pieces.
  4. Pack the rolls snugly in the Bundt pan. Scatter pecans over top.
  5. Stir melted butter, maple syrup, and brown sugar together, and pour over the mixture in the pan. Feel free to save any extra sauce for later.
  6. Bake for 16-18 minutes or until golden. Let cool in the pan.
  7. Run a butter knife around the edges to release.
  8. Pour any leftover brown sugar sauce overtop the bread.
  9. Enjoy!
