Gluten-Free Strawberry Breakfast Strata

This gluten-free breakfast for two features moist and yummy sourdough, fresh strawberries, tangy Greek yogurt, and a few drizzles of either maple syrup or honey. This gluten-free strawberry breakfast strata is a sweet, satisfying, super simple to whip up, and the perfect addition to a slow, relaxed Sunday morning. 

 

What is Strata?

Strata is essentially a bread casserole with eggs, milk, and in most recipes, cheese. Strata is traditionally a savory dish, where bread is soaked in an egg mixture then baked until firm. Strata is classically made with thick layers of bread, and while this recipe can be prepared this way, we cut the bread into cubes allows for better absorption of milk and egg.

Strata usually uses bread, egg, and milk, and incorporates savory ingredients like cheese, spinach, and bacon. A sweet strata uses milk and egg, minus the savory additions. 

Strata is generally much more egg-forward, almost like a quiche. This yields a firmer bake than french toast casseroles, which use a ratio of 1 cup dairy to 3 eggs, or bread puddings, which use a ratio of 1 cup dairy to 1 egg.

How To Make This Gluten-Free Strawberry Strata

This strata recipe is easy! 

First, whisk together the wet ingredients. We add lemon zest and vanilla extract for complexity and natural sweetness.

INGREDIENTS

  • 1/3 loaf dried out Bread SRSLY Classic Sourdough
  • 2 eggs
  • 1/3 cup milk, or milk alternative
  • 1 tsp vanilla extract
  • 1/2 tsp lemon zest
  • 1/4 cup strawberry jam
  • 1/2 cup sliced strawberries
  • 1 cup Greek yogurt
  • Maple syrup or honey, for topping

 

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Cut bread into 1" cubes, then whisk eggs, milk, vanilla extract, and lemon zest together in a small bowl. Dredge bread in egg mixture, then transfer to an oven-safe baking dish.
  3. Keep the dredged bread in the fridge overnight or for 20 minutes for the best texture. 
  4. Add strawberry jam to the dish in dollops, then bake for 25 minutes, or until the egg mixture has set and the bread becomes golden in color.
  5. Remove from oven and top with Greek yogurt, sliced strawberries, maple syrup and/or honey. Enjoy!
