Vegan Maple Bacon French Toast Bake

What’s better than French toast? A Gluten-Free, Vegan French Toast Casserole that is packed with sweet maple and smoky vegan bacon and a gluten-free sourdough bread. We’ve partnered with Hooray Foods to make the ultimate brunch bake that can be prepped the night before! The Classic Sourdough from Bread SRSLY is the perfect gluten-free loaf to soak up a creamy, maple-y vegan custard studded with plant-based bacon and pecans.

Using a good gluten-free bread is highly important to this recipe. Use a stale loaf to allow it to soak up the most moisture from this bake. The gluten-free loaves from Bread SRSLY hold up well to this thick vegan custard, soaking up all the flavor and moisture without losing its structure. This loaf is also a sourdough, adding slight tang and added flavor to this gluten-free bake. 

To make a french toast casserole vegan, we use an egg-like custard made from silken tofu, ground flaxseed, plant milk, cornstarch, and arrowroot powder. Silken tofu creates a creamy, velvety texture of classic custard, while flaxseed acts as a binder (like an egg), and cornstarch with arrowroot powder thicken the base and allow the bake to set properly. Maple syrup and vanilla are added to sweeten up this recipe! 

We're adding a smoky, savory bite to this sweet french toast by using Hooray Foods vegan bacon. It helps turn this sweet bake into a well-rounded breakfast. 

This vegan, gluten-free recipe has protein from the silken tofu, healthy unsaturated fats from the flaxseed, and a source of carbs from Bread SRSLY's gluten-free sourdough loaf. INGREDIENTS

  • 2 cups plant-based milk, unsweetened
  • 1 cup silken tofu
  • ½ cup maple syrup
  • 2 tbsp ground flax seed
  • 1 tbsp cornstarch or arrowroot powder
  • 1 tbsp vanilla
  • ¼ tsp turmeric
  • Pinch of sea salt
  • 1 loaf Bread SRSLY Classic Sourdough, cut into ½ inch cubes
  • 1 package Hooray Foods Bacon, cooked according to package directions, chopped
  • 2 tbsp vegan butter, cubed
  • ¼ cup pecans, chopped

DIRECTIONS

  1. Preheat the oven to 375F. Generously grease an 8x8 baking dish with vegan butter.
  2. In a blender, combine milk, flaxseed, cornstarch, silken tofu, maple syrup, vanilla, turmeric, and sea salt.
  3. In a large bowl, combine cubed sourdough and chopped bacon. Pour the milk mixture over top and let sit for 15 minutes.
  4. Transfer the soaked bread mixture to the baking dish.
  5. Top with cubed butter and pecans.
  6. Bake, uncovered for 35-40 minutes, or until the top is golden.
  7. Enjoy!
