Strawberry Stuffed French Toast (Gluten-Free)

Make breakfast something to dream about with a deceptively simple recipe for Strawberry Cream Cheese Stuffed French Toast! Tangy cream cheese pairs perfectly with juicy strawberries, vanilla, and a touch of zingy lemon zest.
Stuffing the french toast with cream cheese makes this recipe even more decadent and worthy of serving on a special day. Perfect for mother's day, valentines, or brunch!
No dairy? No problem! This recipe works well with your favorite dairy-free cream cheese alternative. The cream cheese mixture is spread between two pieces of slightly sweet and satisfying crunchy Bread SRSLY Seeded Sourdough before dipped into a spiced egg mixture and cooked until golden brown. I kept this recipe with just a hint of sugar, because if you’re like me, you’ll be drowning your French toast stack with rich maple syrup!
To make french toast with gluten-free bread, it's best to slice diagonally with a non-serrated knife. Make sure to not over-soak your bread slices to avoid them falling apart. Fortunately with a good gluten-free bread like that from Bread SRSLY, you won't have this issue! When cooking, make sure your pan is hot and coated with a coconut oil, olive oil, or butter. This will prevent your bread from sticking to the pan.
